This is officially the easiest summer meal of all time. With just a few seasonal ingredients and a whole lot of pasta, you can have totally have your cake and eat it too: it's cheesy and indulgent, but the angel hair, tomato, and basil make it feel light and fresh. PLUS, it requires approximately 30 seconds of time spent near the stove, which is a win in my book on these muggy summer days. Just adding the warm cooked pasta to the brie and tomato mixture creates a melty cheesy sauce that coats everything perfectly - no stove time needed.
Angel Hair Pasta with Tomato Brie Sauce
- 1 lb angel hair pasta, uncooked
- 4 oz brie, cut into 1/2 inch pieces
- 1 pint cherry or grape tomatoes, halved
- 2 cloves garlic, minced
- 1 bunch basil, chopped
- 1/4 cup olive oil
- salt and pepper to taste
Combine brie, tomatoes, garlic, basil, and olive oil in a large bowl. Let sit at room temperature for 1 hour.
Bring a pot of salted water to boil and cook according to package directions. Drain pasta and add to tomato brie mixture immediately, stirring to combine and allowing cheese to melt (you'll still have some less-melted bits of brie, but that's fine). Add salt and pepper to taste and serve warm.
