After 2 years of consistently(ish) making smoothies for breakfast, I've finally settled on my winning combination. You get your day's first hefty dose of green stuff, plus fruit to act as a natural sweetener. I love it for breakfast, but it would be just as great for a snack or an after dinner sweet. It's quick, easy, and inexpensive, and I always feel better about starting my day with so many good-for-you things. I use my Vitamix for my daily smoothies (best birthday present ever - thanks, Tim!), but before that used my old $20 blender, and it worked just fine. Just blend your liquids and your greens together first if you're using a lower-powered blender and then add the rest of the ingredients, so you don't end up with big leafy bits.
This smoothie doesn't require anything other than fruits, veggies, and a couple spoonfuls of greek yogurt (plus ice and water), and you're all set to start your day out with a hit of healthy stuff! You can change up the ingredients if you prefer different fruits or greens (this works just as well with kale), but I'd recommend sticking to the same ratios, and, even if you skip the berries, ALWAYS add ripe banana! It's the key thing that keeps your smoothie from tasting like a blended salad. I've also added in some chia or flax seeds in the past, but would only recommend this if you have a high-powered blender - otherwise, the seeds don't break up and you have a very crunchy smoothie! I just use water in this, since I can never seem to go through an entire thing of soy milk before it expires, but vanilla soy milk would be a great substitute for water if you have it!
Berry Green Breakfast Smoothie
- 1 cup ice
- 1 cup frozen mixed berries
- 3/4 cup cold water or liquid of choice
- 2 ripe bananas
- 2 cups loosely packed spinach or other green such as kale
- 4 tablespoons nonfat plain Greek yogurt
If you're using a high-powered blender, add all of the ingredients and blend! If your blender is a little less powerful, blend your liquid and greens together first, then add the rest of the ingredients. Pour and enjoy!
