Hello eater friends! It's been a while! Honestly, I wish I had a better excuse, but the reality is: I've been doing Weight Watchers, which I absolutely love (I mean, as much as you can love something that doesn't advocate for nachos every day), but it's been much easier to follow other people's recipes that already have the points worked out than to do the math myself. BUT, to quote the beautiful angel princess Oprah, I EAT BREAD EVERY DAY! And by bread I mean pasta because #priorities.
For the uninitiated, Weight Watchers gives you a certain number of "points" per day (and then an extra allowance to flex across the week) and foods have points values based on protein, fat, sugars, etc. Fruits and veggies = 0 points! Probably the best thing I've learned (other than what a serving size actually looks like, ugh) is that if you add veggies and other healthy stuff to pasta, you can eat way more of it for the same number of points. Add a few spiralized zucchini to your spaghetti or a bunch of frozen broccoli to your penne and you get to eat SO MUCH without actually getting rid of the good stuff.
To move on from sounding like a Weight Watchers ad, let's make some pasta! I just made this for myself on this (super weird) March snow day, but double/triple/quadruple the recipe for however many people you're serving. It tastes like it should be way worse for you than it is, plus with the added health benefit of broccoli - it's a win win! I had all of this stuff in my fridge and pantry already, so it's a quick and easy lunch or dinner. Stay warm, and happy eating!
Easy Bacon Broccoli Pasta
- 2 oz whole wheat penne, uncooked
- 1 cup frozen broccoli florets
- 2 slices bacon, uncooked
- 1 teaspoon olive oil
- 1 teaspoon garlic, minced
- pinch of crushed red pepper
- 1/4 cup low-sodium chicken broth
- 1 tablespoon parmesan, grated
- salt and pepper to taste
Bring salted pot of water to boil. Add pasta and cook 9 minutes. Add broccoli to pasta pot and cook an additional 2 minutes. Drain and set aside.
Heat skillet over low-medium heat. Spray with nonstick spray and add bacon. Cook until crispy, flipping occasionally. Set aside bacon and drain grease. Add olive oil, garlic, and crushed red pepper. Cook on low heat for a minute or so, until garlic is brown and fragrant. Add chicken broth and let simmer 2-3 minutes. Chop bacon and add bacon and broccoli/pasta mix to the pan. Mix to combine, add parmesan and salt and pepper to taste, and serve!
