Growing up, I HATED pork, ham, bacon.... really any pork product that wasn't sausage or prosciutto. Thank goodness that changed, because a well-cooked pork chop is now one of my favorite meals. I credit Budget Bytes' Honey Mustard Pork Chops with my enlightenment and highly recommend everyone try her recipe. If you're not a pork fan, that sauce is great on chicken, too! This recipe is even more basic than that one, with a great mix of herbs (pre-mixed, so no need to buy a bunch of different herbs and spices!) complementing the juicy meat. With only 3 ingredients (okay five, if you're including salt and pepper) this is THE easiest meat dish to impress and the perfect Monday dinner!
Herbed Pork Chops
- 2 8 oz boneless pork chops
- 4 tablespoons herbes de Provence
- 2 tablespoons butter
- salt and pepper to taste
Preheat oven to 400. Rub pork chops with herbes de Provence and salt and pepper. Melt butter in cast iron skillet over medium heat, and add pork chops. Sear on all sides until browned, 2-3 minutes per side. Add whole skillet to oven and cook for 12 - 15 minutes or until meat's internal temperature reaches 150 degrees. Remove from oven and rest meat on plate, loosely covered with tin foil, for 10 minutes. Serve and enjoy!
