Hello friends! I've been very very bad about doing these posts but I'm BACK! Poll: do you prefer a short week that has a Friday off or a Monday off? I'm all for Mondays off, as you get to look forward to the long weekend all week and then you get rewarded after the long weekend with a short week! I think this might be a leftover from my time as a teacher, when I had a countdown to all my short weeks - February and March were the WORST for days off.
I hope your Fourth of July's were as great as mine (well, the weekend leading up to it - the Fourth itself was rainy and gross). Almost my entire extended family went to Rehoboth under the guise of celebrating the holiday... but really, we were there to celebrate my cousin's engagement! Hunter got the whole family together for a celebration with champagne and sparklers after he proposed to his now-fiancée Kelli on the beach! It was so fun and we were all so excited to be a part of the event. Congratulations, Hunter and Kelli!
Here's what I'm loving this week:
This steamed clam recipe. Clams and mussels are some of my favorite foods, but I'm terrified to make them. This recipe gives me hope that I can make it happen!
This grilled chicken parmesan recipe. I didn't think chicken parm could get any better, but here it is! I sent this to all of my friends with grills as soon as I saw it.
This blog. Speaking of friends with grills (rough segue, I know), my friend Sarah started a blog chronicling her life as a traveling consultant and giving tips for other constant travelers. She's funny and smart and you should read her blog or else.
This grilled corn and bacon pasta salad. I love pasta salad in all forms, and this is definitely going on the to-make list.
This guide to making danishes at home. I. LOVE. DANISHES. Some of my first memories are of picking up apple danishes from the bakery nearby with my dad when I was little (or did someone just tell me this happened? hmm...) and I have since branched out to include strawberry cream cheese danishes and any other danish that crosses my path. I know what I'm making for breakfast this weekend!
