Senior year of college, I went through a phase (honestly probably one of my favorite phases to date) where I would come home from a bar, make bagel bites, and eat them in bed at 2am while watching the Food Network. Party animal over here! While I eventually moved on and discovered Jumbo Slice after graduation, my love of pizza bagels remains true - for dinner now, not just as a late night snack. Although, now that I think about it, this would be a pretty great (and easy enough to be post-bar-friendly) late night snack too...
Using bagel thins, homemade marinara sauce, turkey pepperoni, and reduced fat mozzarella, these pizza bagels are super light but taste just like regular pizza - perfect for those of us hoping to up the health factor for our New Years Resolutions. If you're a Weight Watchers follower, one serving is only 9 SmartPoints! If you couldn't care less about fat content and all that, use the full fat versions of everything! I won't tell :)
Resolution-Friendly Pizza Bagels
- 4 sliced bagels (I used Thomas' Whole Wheat Thins Bagels)
- 2 cups reduced-fat shredded mozzarella cheese
- 3 ounces turkey pepperoni (about 6 slices per bagel half)
- Homemade marinara sauce (recipe to follow)
- Optional toppings: grated parmesan cheese, crushed red pepper
Preheat oven to 350. Place bagels cut-side up on a baking sheet and bake 10 minutes or until crunchy. If you have a toaster, you can skip this and just toast the bagels instead. Top bagels with marinara, mozzarella (1/4 cup per bagel half), and pepperoni. Bake 3 minutes or until cheese is melted. Top with whatever you like and eat!
Homemade Marinara Sauce
- 28 oz can crushed tomatoes
- 1 tablespoon minced garlic
- 1 teaspoon ground oregano
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 bay leaf
Add all ingredients to sauce pan over medium heat. Bring to a gentle simmer and cook 20 minutes, stirring occasionally. Remove the bay leaf and serve.
